A seasonal, unpasteurised raw cows milk Vacherin Mont d'Or AOP is made from August 15th to March 15th in the Jura region of France and Switzerland. It's characterized by its rich, creamy, and often runny texture when ripe or baked, a soft, pale rind, and a distinctive spruce bark girdle that imparts a unique, sweet, and resiny flavor. This festive cheese is traditionally baked in its spruce box and served as a gooey, fondue-like dip for bread, potatoes, and gherkins.
